Strawberry Syrup

Yet another way to preserve strawberries. I bet it's delicious poured over vanilla ice-cream.

Ingredients

  • 750 grams Strawberries
  • 2 tablespoons Lemon Juice or juice of one medium lemon
  • 400 grams Sugar per 5dl of strawberry juice
  • 2 tablespoons Water

Preparation

1. Crush the clean and dry strawberries in a bowl with small amount of water and the juice of one lemon.

2. Place the bowl over a pan of boiling water for 1 hour.

3. Sieve the mixture through a juice bag or fine-meshed sieve.

4. Measure the amount of juice, pour into a pan and add the correct amount of sugar.

5. Boil up the juice and the measured sugar, stirring constantly until the sugar is dissolved.

6. Remove any foam and allow to simmer for 4-5 minutes.

7. Bottle the syrup in sterilized containers and seal tightly.
