Crispy Zucchini Coins

Ingredients


Preparation

Preheat oven to 450 degrees. Combine bread crumbs, Parmesan, and pepper; mix well. Dip the zucchini slices in egg whites; dredge in bread crumb mixture. Place zucchini in a single layer on a baking sheet coated with cooking spray. Bake at 450 degrees for 15 minutes. Turn zucchini over; bake an additional 10-15 minutes or until outside is crispy and browned.

Note: Baking time might be a bit long check after 8-10 minutes on first side, second side may only need about 5 more minutes.

This was really yummy and something quick for using up zucchini. I wish I would have breaded them a little heavier b/c mine didn't look as nice as the picture! but they were good.

I needed something quick, and had most of the stuff on hand, except the parmesan. But I tried it anyways and they were bland but still real good dipped in ranch---my 4 year old gobbled them up. I'm sure they would be much better with the parmesan cheese, and I think next time I would add some garlic to the mix for extra flavor!

This looks really good. I do same thing but instead of egg white I use olive oil and cook on a well oiled outdoor grill. for a chrispy coat I spray with olive oil spray and a little garlic salt. Try it you'll LOVE it!

I added aome cayenne to the coating of this batch. With fresh orange slices and a salad it made a light evening meal. The same oven-fried technique works for numerous vegetables, chicken, and fish.

I needed a side dish in a hurry, and gave this a try. It was not only good tasting. It was FUN!! I will be making this again. I can see it as a snack, in place of greasy potato chips. And for Weight Watchers, it's only 2.2. points!!

This is a good recipe. I think I would add more spices to the coating mixture. It was a bit bland.
