Low fat creamy cucumber salad Ingredients

1 large Cucumber seeded, peeled & thinly sliced	1 tablespoon Olive oil
pinch Salt to taste	3 tblspoons Vinegar
1/2 teaspoon Pepper	3 tblspoons Reduced Fat Sour cream
3 tblspoons Parsley minced

Instructions for Low fat creamy cucumber salad

In a salad bowl, sprinkle salt, pepper, olive oil and vinegar to sliced cucumber.
Add minced parsley, mix well
Add Reduced Fat Sour Cream, mix carefully
Chill in refrigerator before serving

Note: Sour cream can be substituted by Fat Free yogurt.
