Lamb Meatballs Ingredients

2 sprays Olive oil cooking spray 1/2 cup Breadcrumbs, wholegrain
2 cloves Garlic crushed1 Egg lightly beaten
800 gram Chopped tomatoes 1 small Onion finely chopped
1/4 cup Basil leaves torn1/4 cup Mint leaves chopped
500 gram Minced lamb lean 1/4 cup Feta cheese reduced fat

Instructions for Lamb Meatballs

1. Heat a saucepan over medium heat. Lightly spray with oil. Add garlic and cook for 30 seconds. Add tomatoes and bring to the boil. Reduce heat to low and simmer for 25 to 30 minutes or until sauce thickens. Remove from heat. Add basil and salt and pepper.
(Put on vegetable to steam, or rice as a side dish)
2. Meanwhile, combine mince, breadcrumbs, egg, onion, mint, feta and salt and pepper in a large bowl. Using wet hands, shape tablespoons of mixture into balls.
3. Heat a non stick frying pan over medium heat. Spray with oil. Cook meatballs in batches, for 8 to 10 minutes or until golden and cooked through.
4. Stir back into sauce mixture and mix in.
Serve with steamed green vegetables or rice.
