Italian Portobello Sandwiches Ingredients

1 teaspoon olive oil 3 tablespoons fresh basil leaves chopped
2 cups portobello mushrooms sliced1/4 teaspoon fresh ground black pepper
2 slices red onions 1/4" thick,separated4 slices sourdough french bread toasted
2/3 cup red bell peppers sliced2 slices provolone cheese
1/4 cup fat-free mayonnaise

Instructions for Italian Portobello Sandwiches

1. Heat olive oil in a large nonstick skillet over medium heat.
Add mushrooms, peppers and onions; cover and cook 7 minutes or
until onion is tender, stirring occasionally. Remove from heat,
let cool.

2. Combine the mayonnaise, basil, and black pepper. Spread 1
tablespoon mayonnaise mixture on each bread slice; layer each
of 2 slices with mushroom mixture and top with slice of cheese.
Top with remaining bread slices. Cut each sandwich in half.
