Shrimp Linguine in Clam Sauce

Sort of a Linguine in Clam sauce with Shrimp instead of Clams. You know the old saying, "If we had some ham we could have Ham and Eggs if we had some eggs." Only 18 carbs.

Ingredients

  • 8 ounces Pasta - Linguine
  • 1 pound Shrimp 26 to 30 count cleaned and devained
  • 1 cups Clam juice - bottled
  • 1/2 cup Butter
  • 2 tablespoon Garlic - finely chopped
  • 1 teaspoon Thyme
  • 1/4 cup Parsley - finely chopped
  • 1/2 cup Parmesan Cheese - freshly grated

Preparation

Cook pasta according to package directions, about 8 to 10 minutes. Drain and keep warm.

Meanwhile In a suarcepan melt butter, add the garlic and cook one minute over moderate heat until soft. Stir in clam juice. Add salt, pepper, thyme, parsley and shrimp. Simmer until shrimp is pink through out.

Divide linguine between four serving dishes. Pour shrimp mixture over linguine. Sprinkle with cheese.
