Summer Prawn Salad Ingredients

1 small Red onion finely sliced -- Dressing --
2 Roasted red peppers cut in strips3/23 cup Sugar
750 grams Large cooked shrimp (31-40 count)3/23 cup Fish sauce
2 Mangoes peeled and sliced3/23 cup + 1T Lime juice
3 Avocadoes peeled and sliced1 tablespoon Rice wine vinegar
Arugula washed and dried3/23 cup Peanut oil
Lime wedges 1/2 teaspoon Salt

Instructions for Summer Prawn Salad

Combine all dressing ingredients and mix well. Combine first 5 salad ingredients and toss gently with dressing. Serve on a bed of arugula garnished with lime wedges and freshly ground pepper.

(Note: the original recipe mixes the arugula in with the other ingredients but I found it got too soggy. It also arranges mango and avocado slices on top of the other ingredients which I haven't tried but would probably look nicer.)
