Orange Mustard Pork Ingredients
400 gram Pork
butter
fly
3/4 cup
Chicken stock
salt Reduced
500 gram
Carrot
peeled
1 tablespoon Wholegrain
mustard
500 gram
Sweet potato
1/2 teaspoon
Nutmeg
3 sprays Olive oil
cooking spray
1 tablespoon
Honey
3 whole
Orange juice

Instructions for Orange Mustard Pork
1. Place carrots and sweet potato in saucepan and cover with cold water. Bring to the boil over high heat, reduce to medium. Cook partially covered for 12-15 minutes or until tender. Drain and return to saucepan, add nutmeg and mash until almost smooth. Season with pepper.
2. Add 3/4 cup of orange juice, stock, mustard and honey in small saucepan, cook for 8 to 10 minutes or until sauce reduces and thickens
3. Meanwhile cook pork on health grill until done, usually 6-8 minutes depending upon size of medallion.
First layer mash and top with pork and sauce, green beans on the side.

The blend of carrots and sweet potato made a wonderful mash. I really enjoyed this dish! My wife prepared it so I can't give you a firm timeline to make, but she didn't indicate that it took all that long. The mustard also adds a unique flavor to entire dish. Definitely worth a try!
