Gordon Ramsay's recipe was to die for. For presentation purposes, we decided to put the soup in a bread bowl and used white cheddar as opposed to goat cheese. KISS concept (Keep It Simple, Stupid) makes this dish an easy classic!

Preparation

Cut the florets off the heads of broccoli. Cut the stems into similarly sized pieces. Add all of the broccoli -- florets and stems -- into a pot of rapidly-boiling, salted water (2 tablespoons salt in 5 quarts of water). Cover. Cook 3.5 to 4 minutes.

Using a slotted spoon, put the cooked broccoli pieces into a blender. Fill blender about halfway with cooking liquid. Blend carefully since it's hot. Add more cooking liquid as necessary to achieve the desired consistency. Check seasonings.

If desired, add cheese (goat cheese or cheddar cheese) to the bottom of the bowl before pouring the soup in. Serve, drizzled with olive oil if desired.

This was so easy to make and you can dress it up in countless ways. Try a swirl of red pepper puree or top with parmesean crisps or croutons. I had it just like the original, poured over shredded cheese. I used fresh broccoli from my farm share, the flavor was intense!

I have made this recipe twice, and both times they have been excellent! You can really vary the recipe by adding your own twist, such as changing up the cheese or adding more vegetable toppers. Nonetheless, the base soup itself is flavorful with excellent texture. Nothing will suit you more on a cold winter day than this particular soup!

I use 1 1/2 tablespoons of salt, which is plenty to my taste. I skip the olive oil addition, but wow is it excellent over some goat cheese chevre. This recipe is a great dinner in 15 minutes, if you have a loaf of bread and use one of those big Costco bags of cleaned and trimmed florets. I think chicken stock could be gilding the lily - try it with H2O first and see how great it is (and cheaper, healthier, more simple.)

It was delicious, easy to make, and fast. I'm the head of house and I loved making it and all twelve members of my family loved it also. Who'd think a carpenter like me could do it. It came out too green but maybe next time I'll get the right colour. Thank you so much Chef.Ramsey.

What a fantastic recipe! I went out of my way to find the goat cheese Gordon Ramsay called for. It definitely added that little something extra! I filled the blender about 2/3 of the way up and had the water filled to the halfway mark of the blender. I cannot believe how good and how easy this was! A very inexpensive 'super food' recipe.

Broccoli soup is my all-time favorite food, and this recipe didn't disappoint. I was unsure if it'd have enough flavor given that it's just broccoli and water, but boy was I wrong. This soup has a lovely, mellow, full broccoli taste, without any cream, potatoes or excessive salt needed. Do remember to salt the boiling water liberally, though, and don't forget the black pepper. The goat cheese really adds a nice flavor dimension as well - do follow the recommendation and add a slice to the soup bowl.

I used good chicken stock for about 1-3/4 cups of the 5 cups (not quarts) of liquid and only 1 T salt and lots of pepper. I was impressed to have a thick soup without using cream or cream of mushroom soup. Very healthy and very good! Soup is a deep green and delicious.
