Twice-Baked Potato Casserole

This recipe is SO GOOD! It makes ALOT! I usually freeze half for another meal. You can also use reduced-fat and low-sodium ingrediants.

Ingredients


Preparation

1. Heat oven to 350.

2. Lightly coat a 3 qt. shallow baking dish with non-stick spray.

3. Cook potatoes in just enough water to cover for 20 - 25 minutes, until tender when pierced.

4. Drain in a colander and return to pot.

5. Add butter to potatoes, mash with a potato masher until smooth.

6. Stir in 2 c. cheese, milk, sourcream and eggs until blended.

7. Then add onions and bacon bits, reserving a few tablespoons of each for garnish.

8. Stir in salt and pepper.

9. Spoon into prepared baking dish.

10. Sprinkle with remaining 1/2 c. cheese and bacon.

11. Bake, uncovered, 40 minutes or until top is light golden.

12. Sprinkle with remaining onions.

I have frozen this recipe after baking and reheated with excellent results. I don't think there would be any problem refrigerating it before baking, just increase the baking time.

I want to fix this recipe for an upcoming pitch in at work. Does anyone know if you can do all the prep the evening before - refrigerate and then bake the next day. I was thinking I could do that - then when I get up pop it in the oven. Please help!

This recipe needs no improvement. It's delicious! It makes a lot, but it was so good we never got tired of eating it with dinner.

This is fantastic. I have a fussy child who does not like mashed potato and will not eat it no matter what I add to it, yet she ate a huge serve of this and loved it! A winner for sure.

Mash potatoes while still hot, to prevent them from becoming gummy.I use a food mill or ricer to mash potatoes.

I split this recipe into 2 dishes and froz one. It will be great on a busy evening. This will definately become a favorite dish.

If there's anything we Southerners like is another or different way to fix potatoes because we eat them a lot. I must say this is a very easy and delicious dish. Thanks for sharing.
