Apricot Ginger Chutney Ingredients

1 pound dried apricots cut in quarters 2 cups Sugar
4 cups boiling water 1/4 teaspoon salt
8 cloves garlic 1/2 teaspoon cayenne pepper
1 piece (2 inch) fresh ginger peeled and coarsely chopped3/4 cup golden raisins
1 1/4 cups red wine vinegar

Instructions for Apricot Ginger Chutney

Put apricots in bowl and pour boiling water over them. Let soak for
2 hours.

Combine ginger, garlic and 1/4 c vinegar in food processor or blender
and process until smooth.

Put apricots, ginger mixture and everything else *but* raisins in a
large pot. Bring to boil and simmer for 45 minutes, stirring
frequently. This will scorch if you're not careful.

Add raisins and cook for another 30 minutes until thickened and
glazed.
