Spinach 'n Bean Tostadas Ingredients
1 cup Refried
bean
s, fat free, canned
1/2 cup light
Cheddar
cheese, grated
4 whole
Tostada Shell
s
1 cup
Lettuce
, shredded
1 box
Spinach
, frozen, chopped
1 whole
Tomato
, chopped
1/2 cup Salsa
4 tablespoon
Sour cream
, fat-free
Instructions for Spinach 'n Bean Tostadas
1. Preheat oven to 375 degrees F.
2. Thaw frozen spinach (may microwave in box) and drain well in colander.
3. Place tostadas on cookie sheet. Spread 1/4 cup refried beans on each of 4 tostadas, top each with 1/4 box of the spinach, and 2 tablespoons of the cheese. Bake 7 minutes, or until cheese is melted.
4. Transfer to serving platter or plates. Top each with 2 tablespoons each salsa, lettuce and tomato, and then 1 Tablespoon sour cream.
nutrition information: 170 calories each, 1 g fat, 6 g fiber. 3 WW points per tostada.
