Rinse and dry chicken legs. Mix the dry ingredients together and place on a dinner sized plate. Coat each leg in oil and then roll in dry ingredient mixture until fully coated.
Meanwhile heat smoker as per manufacturer's instructions to between 200 and 220. Cook for about 3 and a half to 4 hours or until internal leg tempature reaches 180. Use either Hickory or Mesquite.
