1. Place onion, bell pepper, tomato soup, mushroom soup, water, and seasonings into slow cooker. Mix well.
2. Place chicken thighs into soup mixture and stir to coat.
3. Cook on Low setting for 8 hours, until chicken and vegetables are tender.
4. Serve on a bed of rice - Yum!
