Tortellini with Spinach and Cherry Tomatoes Ingredients

2 9-oz packages Fresh three-cheese tortellini 1/2 cup Fat-free, less-sodium chicken or vegetable broth
4 teaspoons Olive oil 2 tablespoons Fresh basil chopped
4 teaspoons Bottled minced garlic 1/2 teaspoon Salt
1 teaspoon Crushed red pepper 2 6-oz packages Fresh baby spinach
4 cups Cherry tomatoes halved

Instructions for Tortellini with Spinach and Cherry Tomatoes

Cook tortellini according to package directions, omitting salt and fat.

While tortellini cooks, heat oil in a large non-stick skillet over medium-high heat.

Add garlic and red pepper, saute 30 seconds.

Add tomatoes, broth, basil, salt, and baby spinach to pan; cook 2 minutes or until baby spinach wilts.

Stir in tortellini; cook 1 minute.
