Split Pea Soup ~ JB's Ingredients

2 1/2 cups Split peas; previously dried 2 Bay leaves
8 cups Water 1/4 teaspoon Thyme
1 cup Sweet potatoes grated1/4 tablespoon Pepper
1 large Carrot grated1/4 tablespoon Salt
1 cup Onion chopped1 pinch Marjoram
1 large Celery chopped1/3 pound Bacon Ends

Instructions for Split Pea Soup ~ JB's

In large pot, combine split peas, bay leaves, Bacon ends and water. Bring to rolling boil for 20 minutes. Let cool for 15 minutes skim foam, add thyme, carrots, sweet potatoes, onions, and celery stir in marjoram, salt and pepper. Simmer 1 1/2 hour stirring occasionally. Remove lid and continue to simmer for 45 minutes to thicken. Adjust time thickening to consistency desired.
