Healthy-Hardy Fish Stew

This tasty stew is hardy fare for a cold evening. It's heart-health and Diabetic-friendly as well.

Ingredients


Preparation

Place broth, beer, garlic, celery, and carrots on a large pan. Simmer until veggies are mostly tender (about 10 minutes). Add potato, tomato, salsa, and cook unti potatoes are soft (another 10 minutes). Blend 3/4 of the soup until smooth, season with salt & pepper, add lime juice to taste. Return to pan and re-heat to low boil.

Add fish cubes and cook just until fish is cooked through (about 5 mins).

Serve with garlic toast or croutons.

Loved this soup. The beer does definitely give it a good flavor. This is now my fav soup!!!

This was really good. I made it with the blender and without and definitely preferred without. It was an easy recipe and surprisingly filling.

I also added some shrimp, cayenne, hot sauce (I like it really spicy, and fresh parsley. Next time I might try it with a little rice too.

this was savory and a nice change from the typical chicken broth-based soup. It would have been even easier with an immersion blender

Basic recipe is very good, but we like it better with more hotsauce. Very nice, very easy!

Delicious and quite spicy. The recipe reminded me of my favorite Korean soups, so we decided to serve it Korean-style with a side of rice. Excellent choice! I'm sure it's tasty with bread too, but the rice is an excellent compliment and the combo makes for a filling complete meal.
