cinnamon coffee puffs Ingredients

1/3 cup Butter softened1/4 teaspoon Ground nutmeg
1/2 cup Sugar 1 1/2 teaspoon Baking powder
1 Egg --topping --
1/2 cup Milk 1/4 cup Butter
1 1/2 cups All purpose flour 1/2 cup Sugar
1/2 teaspoon Salt 1 teaspoon Cinnamon

Instructions for cinnamon coffee puffs

In a mixing bowl, cream butter and sugar; beat in egg and milk. Combine flour, baking powder, salt and nutmeg; stir into creamed mixture (batter will be stiff). Fill greased muffin cups two-thirds full. Bake at 350 for 15-20 minutes or until muffins test done. Meanwhile, melt butter and combine sugar and cinnamon. Remove muffins from oven, immediately dip tops in butter, then in cinnamon-sugar.

Super tasty and easy to make. These are basically just little cinnamon muffins. I made these for a light snack for my kids at night. I substituted applesauce in the recipe to make it a little more healthy and just used a simple glaze on the muffins. My kids devoured them. I will have to make a double batch next time! **Like how I said I put applesauce in it to make it healthy then slathered on the sugar glaze later? LOL!!**
