Twang Town Peanut Brittle Ingredients

2 cups Granulated sugar white2 tablespoons Butter
1 cup Corn syrup white1/2 cup Coconut unsweetened
1/4 teaspoon Salt 1/2 cup Pistachios roasted and shelled
1/2 cup Raw almonds 2 teaspoons Vanilla
1/2 cup Peanuts raw2 teaspoons Baking soda

Instructions for Twang Town Peanut Brittle

Mix thoroughly in a glass microwaveable bowl
2 Cups white granulated sugar
1 Cup white corn syrup
1/4 teaspoon salt
Microwave for 10 minutes

Stir in
1/2 Cup raw almonds
1/2 Cup raw peanuts
Microwave for 4 minutes

Stir in 2 tablespoons butter
1/2 Cup unsweetened coconut
1/2 Cup roasted shelled pistachios
Microwave for 2 minutes

*Have ready 2 teaspoons of vanilla extract and 2 teaspoons of baking soda
Thoroughly stir in vanilla and baking soda and pour onto buttered baking sheet.
Let cool and break into bite size pieces.

**Very Important!
Candy will swell when vanilla and soda are stirred in.
Be sure to use a large enough bowl to accomodate this.
Use hot pads and caution when pouring candy out of bowl. It is very hot! I highly recommend using heat resistant spatulas, and use a clean spatula every time brittle is stirred.

***Microwave heat settings can vary, so keep an eye on the brittle for the last 2 minutes so it does not burn. It should be a light/medium brown caramel color.
