Grilled Pork Loin Ingredients
3 pounds boneless pork
loin
Fresh cracked
pepper
2
garlic
1 cup
chicken broth
1 teaspoon
rosemary
4 ea red bliss
potato

bacon
1 ea
carrot
salt
flour
Instructions for Grilled Pork Loin
Sprinkle inside of loin with salt and pepper. Stuff with mixture of rosemary, chopped bacon, and garlic and secure with toothpicks or cooking twine.
Place in large casserole dish and surround with carrots and potatoes. Pour broth over veggies and meat. Season with salt & pepper.
Put into 350 degree oven until internal temp reaches 155 (recipe said 60 minutes but more like 2 hours). Baste w/ own juices every 1/4 hour.
Remove meat to cutting surface and let stand 5 minutes.
Remove drippings to a sauce pan, add flour, salt, pepper to make a gravy.
Grove Tips 10/03/2006: Used a 5.7 lb loin. Still took same time. Also used fresh rosemary leaves inside butterflied pork and 2 full rosemary sprigs. Carrots were still too raw so next time consider blanching them first. Also, bacon would be better cooked (at least a little bit) first and then crumbled or sliced. Used pork broth instead of chicken.

Hi swibirun -- I love all your recipes. Just a question about this one -- looks great, but is this mis-named? It's currently called "grilled pork loin", but it seems to be baked/roasted. Am I missing the "grilling" step?
