African Peanut Soup Ingredients

1 tablespoon Peanut oil 1 tablespoon Balsamic Vinegar
1 clove Garlic minced1/4 teaspoon Cayenne
2 cans Chopped Tomatoes undrained2 teaspoon Salt
1 tin (70g) Tomato paste 1 cup White rice
1/2 cup Creamy peanut butter 6 each Spring onions chopped
4 cup Chicken stock 1/4 cup Salted peanuts roughly chopped

Instructions for African Peanut Soup

In a med saucepan, over med heat, heat the oil & garlic for 1 min. Add the tomatoes, tomato paste, peanut butter, stock, vinegar, cayenne & salt & whisk together to combine. Bring to a boil. Add the rice, reduce heat to low, cover & cook for 20 mins. Ladle into individual bowls & garnish with the spring onions & peanuts.
