Thai Peanut Chicken Ingredients

Salt &
pepper
to taste
3 cloves
Garlic
chopped
1 cup Canned
coconut milk
1 medium
Onion
chopped
a few drops of Hot
pepper
sauce
1/4 tsp
Ginger
grated
3 tbs Smooth
peanut butter
1 cup Fresh
tomatoes
chopped
Roasted peanuts
1/2 tsp
Chili powder
Green onion
sliced
1/4 tsp Dried
coriander
Additional
Cilantro
chopped
1 tbs
Cilantro
chopped
Instructions for Thai Peanut Chicken
1. Dredge chicken in flour mixture and brown. Remove and saute garlic, onion, and grated ginger. Add tomatoes and cook for 1 minute. Add chili powder, coriander, cilantro, s/p, and 2 TBS water. Cover and simmer for 2 minutes.
2. Add coconut milk, hot sauce, and peanut butter. Stir until smooth and place chicken face down in sauce. Spoon sauce over chicken, cover and simmer for 30 minutes. Flip chicken over and simmer for another 10 minutes.
3. Garnish with peanuts, scallions, and cilantro.
This recipe works equally well with boneless chicken breast. (Reduce cooking time by 10 minutes; may need to add broth if sauce seems too thick.)
Serve with basmati rice (oil and salt only).
