Smashed Potatoes Ingredients

1 bag Frozen hash browns 16 ounce Shredded cheese of choice,
1 stick Butter 1/2 cup Milk warm
5 slices Bacon fried and crumbled1 teaspoon Chicken bouillon dissolved in milk
1/2 cup Green onion (Scallions) sliced thin

Instructions for Smashed Potatoes

Thaw frozen hash browns or make fresh using 4-5 baking potatoes.
Preheat oven to 350.
Fry bacon to crisp and set aside to cool.


Melt 1/2 stick of butter in large skillet.
Add finely chopped green onions. Saute for 5 minutes or until tender.
Fold in hashbrowns. Fry - don't move around - until crisp on one side.
Melt remaining butter in microwave safe dish.
Combine melted butter, milk and chicken bouillon.
Add crumbled bacon.
Add to skillet mixture and combine well.
Pour mixture into glass baking dish.
Top with shredded cheese.
Bake 15-25 minutes until cheese is melted and casserole bubbles.
