Old-Fashioned Soft Pumpkin Cookies

These cookies are something different and great for after school with a big glass of milk.

Ingredients


Preparation

PREHEAT oven to 350 F. Grease baking sheets.

COMBINE flour, baking soda, baking power, cinnamon, nutmeg and salt in medium bowl. beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

FOR GLAZE:

COMBINE 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

NOTES:

For a variation add 1/2 cup chocolate chips or nuts to the recipe.

These cookies are great! I made the regular glazed version, and I also added chocolate chips without using the glaze. I used a whole can of Libby's pumpkin to give them more of a pumpkin flavor. A half a cup of chocolate chips is not enough for this much batter. I used a 12oz bag. Everyone loves them. Thanks for posting this recipe.

My kids and their friends love these cookies. Very easy and quick to make. I don't use the glaze, heavy whipping cream with some vanilla and powder sugar is perfect. moist and great tasting. The one problem with this recipe is that once they are made, they seam to disappear within minutes.

Everyone at my dinner party enjoyed these--kids and adults alike. The frosting is great. It's a simple recipe, and the finished product is delicious. The one thing I might try next time is including whipped cream for dunking. I found myself craving whipped cream as I ate them.

This wonderful Pumpkin Cookie recipe brought back some great memories for me. My grandma used to make similar cookies for us and this taste so much like what she made.
