Artichoke Pie (by Rose Ruisi Esposito) Ingredients

2 packages Artichoke hearts thawed1/2 pound Mozzarella cubed
5 cloves Garlic chopped1/4 cup Parmesan cheese
4 tablespoons Oil Salt and pepper to taste
6 Eggs Pie crust

Instructions for Artichoke Pie (by Rose Ruisi Esposito)

* Saute' artichokes and garlic in oil until lightly browned, cool.
* Beat eggs, add mozzarella cheese, parmesan cheese, salt and pepper, mix well.
* Add artichoke mixture, blend well.
* Pour into an unbaked pie shell.
* Cover with pie crust, cut slits in top.
* Bake 45 minutes to one hour in a 350 degree oven.
* Top can be brushed before baking with egg yolk beaten with a tablespoon of milk.
