Cheesecake (by Rose Ruisi Esposito) Ingredients

1 pound Cottage cheese small curd cream style2 tablespoons Lemon Juice
2 packages (8 ounces) Cream cheese softened1 teaspoon Vanilla
1 1/2 cups Sugar 1/2 cup Butter melted
4 Eggs slightly beaten1 pint Sour cream
1/3 cup Corn starch Graham crackers

Instructions for Cheesecake (by Rose Ruisi Esposito)

* Grease a 9 inch spring form pan, dust with graham cracker crumbs.
* Seive cottage cheese into a large mixing bowl. Add cream cheese, beat with a high speed of electric mixer until well blended and creamy.
* beating at a high speed, blend in sugar, then eggs.
* Reduce speed to low, add corn starch, lemon juice and vanilla. Beat until blended.
* Add melted butter and sour cream, blend with low speed.
* Pour into prepared pan.
* Bake in a 325 degree oven for about an hour and 10 minutes or until firm around the edges.
* Turn off oven.
* Let cake stand in oven 2 hours.
* Remove and cool completely on wire rack.
* Chill
