Chili Con Queso (by Marco Anthony Stanco)

Ingredients

  • 3 pounds Chopped meat
  • 2 can (16 oz) Kidney beans
  • 2 large Onions chopped
  • 1 clove Garlic chopped
  • 1 1/2 pounds Velveta Cheese
  • 1 Jar Salsa to taste
  • 2 teaspoons Salt
  • Oil to coat the bottom of a 4 qt pot

Preparation

* In a stock pot, add oil and heat for 3 minutes, add onions and garlic and saute' until translucent.

* Add chopped meat, brown and drain the fat.

* Add salt and kidney beans and simmer.

* In a separate pot on low heat, melt cheese and salsa.

* Add mixtures together and simmer, stirring occasionally.

Serve with Tortilla Chips.
