Cinnamon Crumble Coffee Cake

For the past couple of days, I have been dreaming of Entenmann's coffee cakes. I don't know, I just miss them. So I thought I would have a look for a "similar recipe". Yippee - I found one and can not wait to try it out. For those of you who can pick up a genuine Entenmann's and have any knack at matching recipes, please give this a go - I really want to give my kids a taste of home...

Ingredients


Preparation

Oven Temp: 400F / 200C / Gas Mark 7

1. Mix together the flour, sugar, salt and baking powder. Add in the oil.

2. Divide this mixture - one half slightly larger than the other - into 2 bowls.

3. In the smaller portion add the eggs, milk and vanilla extract. Mix well until free of lumps ( mixture will be thin ). Pour into greased 9 x 13-inch pan.

3. In the larger portion add the butter, cinnamon & nuts. Mix with hands , making crumbs, leaving some large crumbs.

4. Bake for 25-30 minutes till browned. Cool and sprinkle with powdered sugar.

I really liked how crumbly it was, and the cinnamon vanilla hints. Next time I think I would like to add a little brown sugar to the top to give it that little extra I was looking for. To cook this recipe also took a little while longer than the recipe called for; for some reason.

Re: the previous post. This makes perfect sense. Use 5 cups of flour OR use a mixture of flour and Bisquick. Since this recipe requires 5 CUPS, then if using the mix of flour and Bisquick, it means use 2 1/2 cups of flour and 2 1/2 cups of the Bisquick! The recipe author is making reference to "All-purpose," when referring to the flour used in most recipes, including this one. The recipe is PERFECT either way!

I started with the oven temp at 350 and baked an additional 15 minutes (40 mins total). I omitted nuts (allergies) but the topping was delicious. Very easy to make, but seriously...four servings? For real? I would say 12-16 servings. I can't possibly imagine four people finishing this off, no matter how hungry. But still, great recipe.

This is a very good recipe. Satisfied my craving for coffee cake in a flash. The cake was cake part was moist and not very sweet, and the topping was crunchy with a nice taste of cinnamon. The family loved it and we will be having it again.

Delicious. However recipe states it serves 4. 4 what? This bakes in a 13X8 inch pan, it appears like it would serve 8 or even more depending on size of serving but 4... that would surely put someone in a diabetic coma! Also we had to bake ours an extra 10 minutes and we lowered the temp to 375 for the additional 10 min.

It's so YUMMY!!!!! I substituted the nuts with graham cracker cumbs! Yum. I personally think it tasted better the day after I made it. I will so be making this again! PS. I really am not a chef at all, I'm college student, and it was so easy to make, so if I can do it, so can you!

Recipe produced a very gooey texture under the crumb texture. Even though I baked it an additional 20 minutes, cake was more like a paste. My husband who eats everything, wouldn't eat this cake.
