100% would make this recipe for High Fiber Apple Pumpkin Bran Muffins again.
High fiber and fruit muffins. I have IBS and am interested in healthy living so this is the recipe I came up with. They are dense but moist. You can add raisins too if you want. Great warmed with some Celeb butter (canola and olive oil) or even cream cheese :)

High Fiber Apple Pumpkin Bran Muffins Ingredients
2 cup Soy
milk
2 1/2 tablespoons
Baking powder
2
Egg
1 cup Canned
pumpkin
10/27 cup
Honey
2
Apple
grated
10/27 cup
Olive oil
1 cup All-Bran cereal
2 cups Oat bran
5/6 pound
Prune
s chopped
2 cups Whole wheat
flour
3/4 cup Oatmeal
1 teaspoon
Salt
Instructions for High Fiber Apple Pumpkin Bran Muffins
Preheat oven to 350 degrees.
Mix wet ingredients together, add oat bran.
Mix dry ingredients together in seperate bowl.
Add dry mix slowly to wet mix and stir very well.
Fill greased or lined muffin tins 3/4 way full with batter.
bake for 12-15 minutes or until a toothpick inserted comes out clean.
Try one while still warm. Bakers bonus :)

Tasty way to get some healthy nutrition without a gritty bran texture. Nutrition in brief per muffin: 132 calories 5 grams fiber 4 grams fat (2 mono-unsaturated, 1 poly and only 1g saturated) 17 extra carb (26 including the fiber) 4 grams protein. [I posted this recipe.]
