Potatoes and Eggs (by Emily Ruisi Stanco) Ingredients

4 tablespoons Olive oil Salt and pepper to taste
5 medium Potatoes peeled and sliced hot or sweet Peppers optional
6 large Eggs scrambled

Instructions for Potatoes and Eggs (by Emily Ruisi Stanco)

* Heat oil in a 10 inch frying pan over medium heat, add the sliced potatoes and saute' until tender and golden brown, drain any excess oil.
* Add scambled eggs and edge pan with a spatula until the egg mixture is semi dry.
* Place a large plate over the frying pan and turn the mixture to cook on the opposite side.
* Cover and cook until done.
