Braccioli (by Rose Ruisi Esposito) Ingredients

Bottom Round Steak Bread crumbs
Garlic minced Parmesan cheese
2 slices Bacon Egg; hard-boiled
Fresh parsley

Instructions for Braccioli (by Rose Ruisi Esposito)

Quantity of ingredients are a matter of taste.

* Pound bottom round steak until flattened.
* On top of each piece place minced garlic, cooked bacon, cheese, fresh parsley, some hard boiled egg and bread crumbs (mix ingedients before placing on top of steak).
* Roll steak and insert toothpicks to hold together (or tie up with twine).
* Brown in a frying pan in olive oil (turn and brown on all sides).
* Then place the braccioli into a pot of tomato sauce and cook for 1 - 1 1/2 hours.

My grandmother made this very similarly, but she added chopped fresh tomatoes and used Romano Locateli cheese. The recipe is very flexible as to amounts of each ingredient, but the egg should predominate. You can use any cut of beef that lends itself to pounding.
