Pumpkin Cobbler Ingredients
BOTTOM LAYER
FILLING
1 box (18.25 oz) Yellow cake mix set aside 1 cup to use for topping
2 can (12 oz)
Pumpkin
canned
1/2 cup
Margarine
melted
3
Eggs
1
Egg
1/3 cup
Milk
TOPPING
1/2 cup
Brown sugar
1 cup Yellow cake mix
1/2 cup
Sugar
1/2 cup
Sugar
2 teaspoon
Cinnamon
1/4 cup
Margarine
1 teaspoon
Pumpkin
pie spice
1/4 cup Nuts chopped
Instructions for Pumpkin Cobbler
Preheat oven to 350 degrees. Make bottom layer by mixing ingredients to fully combine (remember to remove 1 cup of cake mix before mixing!) Press into a greased 9 x 13 pan.
Combine topping ingredients, except the nuts, into fine crumbs and keep cold.
Mix all filling ingredients with an electirc mixer on low until fully combined. Pour over bottom layer. Sprinkle topping over all. Top with chopped nuts, if desired.
If using a metal pan, bake at 350 degrees for 45-50 minutes. If using a glass pan, bake at 350 degrees for 15 minutes, then turn down oven to 325 degrees and bake for an addidtional 35 minutes.
