Lime Basted Pork Chops w/ Plum Relish Ingredients
1/2 cup Fresh
lime juice
, divided
2 4-oz Boneless pork
loin
chops 3/4 inch thick
1/3 cup Plums pitted and finely chopped; can use
mango
1 tsp
Thyme
chopped
2 tblspoons
Tomato
chopped, finely
1/8 tsp
Salt
1 tblspoons
Green onion
finely chopped
1/8 tsp
Pepper
1 tblspoons
Brown sugar
Vegetable
cooking spray
2 drops Hot
pepper
sauce (don't omit this!)
Instructions for Lime Basted Pork Chops w/ Plum Relish
Combine 1/2 tsp. lime juice and next five ingredients (plums, tomato, green onion, brown sugar, hot pepper sauce) in a bowl and stir well. Cover this relish and chill.
Place pork between 2 sheets of heavy duty plastic wrap. Flatten to 1/2 inch thickness, using a meat mallet or rolling pin. Sprinkle both sides of pork wtih thyme, pressing it into the meat. Then sprinkle with salt and pepper.
Place pork chops in a heavy-duty zip-top plastic bag. Pour remaining lime juice over the pork. Seal bag and shake well. Marinate in refrigerator 1 hour, turning bag occassionally.
Remove pork from marinatde, reserving marinade. Place marinade in a small saucepan and bring to a boil. Remove from heat; set aside.
Coat grill rack with cooking spray; place on grill over medium-hot heat (350 - 400). Place pork on rack; grill, covered, 8 minutes on each side or until done, basting occassionally with marinade. Serve w/ relish.
