Honey and Coarse Grain Mustard Roast Chicken Ingredients
3 1/3 pound
Chicken
our 4-6 poussins
3 1/3 fluid oz
White wine
1 tablespoon
Olive oil
1 teaspoon
Tomato paste
1 tablespoon Coarse-grain
mustard
1 3/4 cup
Chicken stock
1/2 cup
Honey
1 1/3 fluid oz Corn
flour

1 ounce
Butter
chilled
Instructions for Honey and Coarse Grain Mustard Roast Chicken
Prep time: 15 minutes
Roast time: 1 hour
Oven Temp: 375F / 200F / Gas mark 5
1. Season inside of chicken with salt and pepper. Rub the outside with olive oil and coarse-grain mustard and season to taste.
2. Place the chicken in a roasting pan and roast for 30 minutes. Baste, pour honey over the chicken and return them to the oven for a further 30 minutes, or until the juices run clear. Remove from the pan and leave to rest for 10 minutes.
3. SAUCE: Strain excess fat out of the roasting pan. Place the pan over a high heat on the stove and add the white wine. Allow the wine to reduce by half, then gently whisk in the tomato paste.
4. Add the chicken stock and reduce over a medium heat for 5 -10 minutes. Add 40 cornflour to thicken, if necessary. (The sauce must coat the back of a spoon.) Remove the sauce from the heat and whisk in the chilled butter. Season to taste and serve with the roast chicken.
