1. Preheat oven. Meanwhile, heat the olive oil in a large flameproof casserole dish. Add the chicken, onions, mushrooms and thyme and fry all over for 5-6 minutes until golden and the onions are starting to soften. Add the sherry and cook for another 1-2 minutes.
2. Add the stock and tomatoes, cover, bring to a boil, then put in the oven and cook for 30 minutes.
