Ingredients
- 4 large Potatos - Idaho's are best
- 1/2 Onions - white or yellow chopped, very fine
- 1 12 inch Celery chopped,very fine
- 2 large Eggs hard boiled
- 2 sprigs Cilantro
- 2 tablespoons Morton Hot Salt
- 2 teaspoons Chipotle Chile Pepper Powder
- 1/3 cup Hellman's Mayonaise
- 4 ounces Vlasic Sweet Pickel Relish
- Hungarian Paprika as desired
Preparation
......
1. Boil the potatoes until they are done but not overcooked. Just cook until a fork meets a little resistence when you poke the potato. If they are overcooked a little that just adds to the creaminess of the sauce.
2. Boil eggs over medium high heat until hard boiled.
3. Allow potatoes and eggs to cool. You can run cold water over them in a strainer to speed along the process.
4. Peel the posatoes and slice into chunks. 1 inch by 1 inch chunks is nice.
5. Peel and slice the eggs
6. Chop the onion into small pieces.
7. Mix ALL ingredients, except potatoes and eggs. Pour mixture over cut potatoes and eggs. Mix well.
8. Store in refrigerator until ready to serve.
9. Enjoy.
