Jan's Boiled Pineapple Fruit Cake Ingredients

1 cup Brown sugar 2 Egg
1 405gr can Pineapple crushed4 cups dry mix fruit eg; apple, pear, apricot sultanas, peaces
1 teaspoon Mixed spice 1 teaspoon baking powder
1 cup Plain flour 4 ounces Butter
1 cup SR flour Brandy enough to cover the fruit

Instructions for Jan's Boiled Pineapple Fruit Cake

1 place sugar, pineapple undrained fruit in a bowl and cover with brandy. let sit for 24-72 hr
2 then put it in to a saucepan with baing powder and butter.
3 Bring to boil and boil for 3 minutes
4 Remove from the heat and cool completely.
5 Sift flours and mix into the cold fruit mix with well beaten eggs.
6 Put the mixture into a greased and lined 8" 20 cm cake tin
Back at 350F 35-50 mins
Note: cover with a brown paper bag if it is not cooked in the milddle to stop the top from burning

Ingredient Insight - look inside this recipe

It is hard to put active time as I soke the fruit up to 2 days before I start cooking. I find it can take longer to cook depend on the oven you use. If is starts to brown to much on top put a brown paper bage over the cake to finsh off the cooking [I posted this recipe.]
