Place roast in a large plastic bag. Sprinkle with pepper. mix garlic, soy sauce and bourbon. Pour this mixture over roast in bag. Marinate for 2 hours at room temperature or overnight in refrigerator. Allow roast to come to room temperature before roasting. Place meat on a rack in a pan. Place bacon on top. Pour marinade over it and put onion slices on top. Place in 450 degree preheated oven. Immediately reduce heat to 400 degrees. Roast for 35 to 50 minutes. Internal temperature should be 135 degrees for a rare, jucy roast .
