I developed this recipe for my mother who loves sausage rolls but doesn' t eat meat anymore. While I usually use pie pastry that I make, you may certainly buy pastry or use puff pastry.

Vegetarian Sausage Rolls Ingredients

1 cup Carrot diced1/2 teaspoon Salt
1 cup Zucchini cubed1 teaspoon Worcestershire sauce
1/2 large Onion chopped1 teaspoon Oregano
3 Garlic cloves 1/2 teaspoon Basil
1 large Potato cooked and chopped1/2 teaspoon Black pepper
1 cup Bread crumbs 3/4 teaspoon Cayenne
1/2 cup Rolled barley 1/2 teaspoon Curry powder
3 large Eggs

Instructions for Vegetarian Sausage Rolls

Put garlic cloves into food processer. Run till finely chopped. Add carrot and pulse. Add remaining ingredients and pulse till blended and fine.

Use puff pastry or your favorite pie dough. Bake at 375 for 40 minutes.

** Rolled oats may be substituted for rolled barley. Use regular kind, not quick cooking.

NOTE: Filling expands. Don't overfill your dough.
