Curried Shrimp Ingredients

7 ounce Frozen or fresh shrimp dash Cumin
2 tablespoon Vegetable oil dash Ginger
2 medium Onions chopped finely dash Dry mustard
1 large clove Garlic dash Crushed dried red peppers
1/4 teaspoon Salt 3 large Tomatoes peeled, seeded, chopped
1/2 teaspoon Ground coriander 1 tablespoon Lime Juice
1/4 teaspoon Ground turmeric Rice

Instructions for Curried Shrimp

Heat the oil in a large frying pan, at least 12 inches wide. Add the onion and garlic. Sprinkle with the spices.

Cook, stirring often, about 5 minutes or until onions are soft. Be careful not to allow the onions to brown.

Add the tomatoes and lime juice and cook, uncovered, until thick. This will take about 15 to 20 minutes. Add the shrimp and heat through.

If using frozen shrimp, stir and cook over medium heat for 5 minutes or until shrimp are heated through and all liquid has evaporated.

Serve over rice.

If you like a lot of sauce, increase tomatoes and/or water and also increase the amount of spices for more heat.
