Bran Muffins Ingredients

5 1/2 c Flour 8 oz Eggbeaters
2 1/2 c Sugar 1/2 c Molasses
3 c Wheat Bran 2 c Fruit raisins, blueberries, grated carrots, or 12 oz cranberries with
2 c All Bran Cereal 1 qt Buttermilk
2 tb Cinnamon 3 tb Baking soda
2 c Applesauce

Instructions for Bran Muffins

Combine all dry ingredients except baking soda. Combine soda and buttermilk. Add applesauce, eggbeaters, molasses and beat well. Make a well in the dry ingredients and pour in liquid mix. Stir in raisins or other fruit.
Bake at 375 degrees for 20-22 minutes.
The batter may be stored in a container in the refrigerator for 6-8 weeks, or bake the entire batch and freeze muffins for later use.
