Gingerbread Waffles Ingredients
1/2 cup Golden
brown sugar
packed firmly
1 teaspoon
Cinnamon
1 large
Egg
1/2 teaspoon
Allspice
3/4 cup
Buttermilk
1/2 teaspoon
Baking soda
1/4 cup Light
molasses
1/4 teaspoon Dry
mustard
3 tablespoons
Butter
melted
1/4 teaspoon
Salt
1 cup All purpose
flour
1/3 cup
Raisins
chopped
1 1/2 teaspoons
Baking powder
2 tablespoons Crystallized
ginger
minced
1 teaspoon

Instructions for Gingerbread Waffles
Whisk sugar and egg in medium bowl to belnd well, about 2 minutes. Mix in buttermilk, molasses and butter. Combine flour, baking powder, spices, baking soda, mustard and salt in small bowl. Ad to liquid ingredients and whisk to blend. Stir in raisins and crystallized ginger.
Preheat waffle maker, then brush with melted butter. Spoon batter onto waffle maker. Cover and cook waffles until golden and cooked through. Repeat with remaining batter. Serve waffles immediately with whipped cream and maple syrup. Makes about 12 waffles.

Very tasty, and sweet enough that no additional syrup is required, although whipped cream/syrup/butter are suggested. This recipe makes very heavy and thick waffles, almost cake-like, so adding a little milk or water to thin the batter would yield more and lighter waffles. [I posted this recipe.]
