Skillet-Braised Bratwurst and Sauerkraut Ingredients
2 pound
Sauerkraut
packaged, rinsed
1 1/2 pound Bratwurst cut into 3-inch lengths
2 slices
Bacon
1 each
Onion
sliced thin
1 cup
Chicken broth
Salt &
pepper
to taste
10 each Juniper berries
1 each Apple
granny smith
, peeled & grated
2 each
Bay leaf
4 teaspoon
Brown sugar
2 tablespoon
Butter
Instructions for Skillet-Braised Bratwurst and Sauerkraut
Preparation: Microwave sauerkraut: combine sauerkraut, bacon, broth, juniper berries and bay leaves in microwave-safe bowl. Cover tightly with plastic wrap. Microwave on high until sauerkraut softens, about 10 minutes.
Brown bratwurst: Meanwhile, melt butter in 12-ich skillet over medium heat until melted and foaming subsides. Brown bratwurst lightly on all sides, about 3 minutes total. Transfer to plate and set aside.
Saut onion and sauerkraut: Add onion and teaspoon salt to skillet, and return to medium heat until onion is softened, about 5 minutes. Stir in sauerkraut mixture, apple and brown sugar, and bring to simmer
Cook bratwurst: Nestle bratwurst into sauerkraut, cover and reduce heat to medium-low. Cook until sausages are no longer pink in center, 10 to 12 minutes.
Presentation: Discard bay leaves and bacon, and season with salt and pepper to taste. Serve.

Juniper berries can be found in the spice section of the supermarket. Although sauerkraut comes packed in cans and jars, we found sauerkraut packaged in plastic bags ( which are found in the refrigerated section ) to be superior in flavor and texture. [I posted this recipe.]
