Beef n' Barley Kettle Ingredients
1 lb. sir
loin
diced
4 cups water
1 1/2 tsp.
salt
2 cups
barley
cooked (more or less to your preference)
1/2 tsp.
season
ed salt
1 can (14.5 oz) fire roasted
tomatoes
diced or crushed (optional) (Muir Glen brand is very good)
2 medium
onion
s chopped
2 can (14 oz) beef
broth
1/4 tsp. ground
red pepper
1 cup
red pepper
diced
1 1/2 tsp.
black pepper
corns crushed or coarsely ground
1 cup yellow
pepper
diced
2 tbsp.
butter
Instructions for Beef n' Barley Kettle
Sprinkle beef with salt and pepper, set aside. Cook onion in butter in large saucepan until tender. Add beef, cook until no longer pink. Add water, broth, barley, tomatoes (if using) and bring to a boil. Reduce heat, cover and simmer 5 to 10 minutes. Stir in bell peppers, cover and simmer 5 minutes longer.
