i wanted to like this, it looked quick and easy and i guess it was, but it just didnt work for us. It might have been my fault, we used a 16oz jar of salsa...between the layers and on top (maybe it should have been a cup, dont know, it wasnt stated). It ended up leaving way to much of the salsa in a "run off kind of state".

i would like to make this recipe, but as mentioned before, what do you do with the other half of the meatloaf? after the cheese and salsa do you place the other half on top?

Question - what do you do with the other half of the meat mixture? I assume you put the cheese (and maybe the salsa) between the halves of meat mixture?? Or do you put the salsa in the middle and top with the cheese for the last 10 minutes? How did those other ppl not have this info and have half a loaf turn out so well? What did they do with the other half of the raw meat mixture?

This recipe is the bizness! Sincerely. For a start, I have made this recipe now in 3 different ovens, at least one of them a gas oven, the others electric and it turns out perfectly EVERY SINGLE time. I love it. Also, sometimes I substitute broken up corn chips (Doritos) instead of crackers...

Although this recipe is great on it's own, I had to add a few things that my family are used to in a mexican dish. For instance: cilantro, garlic, cumin, and lime juice. My husband likes to eat this with some hot peppers also.

Very easy dish to assemble and quite tasty. I would definitely make this again. Thanks for sharing, SLCGUY.
