In a large skillet, heat oil over medium heat. Saute garlic and onions, add the zucchini and peppers, cook 5 minutes or until veggies are tender-crisp, stirring occasionally.
Add the chili powder, tomatoes with diced chilies, and olives, and bring to boil.
Reduce heat to low. Simmer uncovered 10 minutes, stirring frequently, until mxture thickens. To serve, toss cooked spaghetti with vegetable sauce. Sprinkle with parmesan cheese, if desired.
This had excellent flavor. My one comment is that you might want to experiment with using less pasta, or mixing pasta individually based on amount of sauce preferred. For us, it didn't quite have enough sauce. But it was still delicious, and a good way to sneak in some whole grains without giving up flavor.
