Ingredients


Preparation

Steam rutabaga until tender.

Remove from heat; let stand until cool.

Coarsely shred rutabaga. Preheat oven to 350F.

Combine remaining ingredients, except for 1/4 cup of cheese, in a medium bowl.

Add rutabaga, stirring lightly.

Turn into a 1-quart casserole dish. Sprinkle with remaining cheese.

Bake 35 minutes, or until heated through.

A terrific dish with lots of flavor. Do not ignore this recipe because it is a vegetable that you might not be familiar with. Rutabagas are a cross between cabbage and turnips. This often overlooked and under used root vegetable has a great flavor. This casserole makes an excellent side dish for any meal. Perfect for the holidays since it can be prepared well in advance and the flavor of the rutabaga improves with reheating. The most difficult step in preparing the dish is peeling the rutabaga(s)...it can be a challenge. They are hard and dense. They cannot be peeled like potatoes. Using a sharp knife, you'll need to cut off about 1/4-inch of the outside surface. Just start in one spot and keep going until all you can see is the golden flesh of the rutabaga. To cut it in chunks, first cut it in half with your largest, heaviest knife, and then work from there.
