Soak beans overnight in 1 quart water in a heavy iron pot. Place pot on stove. Add 1 1/2 quarts water and remainder of ingredients and bring to a boil. Reduce to medium heat and cover. Keep beans under water by adding water as necessary. Cook for 3 to 4 hours or until beans are very soft and water has cooked down to a thick gravy.
Place hot sauce or pepper sauce on the table for everyone to add for their own tastse. Serve over hot, fluffy rice with corn bread and salad.
