A modification of the traditional hummus recipe from the Grit Restaurant Cookbook (one of my all-time favorite cookbooks!).

Chipotle Hummus Ingredients
2 cans (15.5-oz)
Garbanzo bean
s (chickpeas) drained, with liquid reserved
1/4 cup
Extra virgin olive oil
2 teaspoons
Cumin
powder
1 teaspoon Fresh
garlic
chopped
3/4 teaspoon Freshly
ground pepper
1/3 cup Tahini (
sesame seed
paste)
3/4 teaspoon
Salt
4 whole Chipotle chiles in
adobo sauce
(use more or less to taste)
1/3 cup Fresh
lemon
juice
2 teaspoons
Adobo sauce
from canned chipotle chiles (use more or less to taste)
Instructions for Chipotle Hummus
Puree all ingredients except bean liquid in a food processor. Gradually add the minimum amount of chickpea liquid required to give the mixture a thick, creamy, smooth consistency. Blend until all graininess is gone. Cover and refrigerate at least 1 hour.
Note: Using 4 chiles makes this hummus mildly spicy.

The perfect snack to have on hand in the fridge - serve with pita chips, bagel chips, or regular pita bread. This is a great addition to a potluck, and travels well for picnics and car trips. Makes good sandwiches too - with cucumbers, lettuce (or sprouts), tomatoes, and red onions. [I posted this recipe.]
