Rock Cornish Game Hens with Garlic Basil Bruschetta Ingredients

2 Cornish Hens approximately 20 oz. each washed and patted dry Kosher Salt to taste
1 medium Tomato seeded and diced Pepper freshly ground, black
1/2 cup Fresh basil leaves 1 Lemon freshly squeezed
4 cloves Garlic smashed4 slices French bread grilled and sliced
2 tablespoons Herbes De Provence dried1/8 cup Olive oil extra virgin
2 tablespoons Thyme dried

Instructions for Rock Cornish Game Hens with Garlic Basil Bruschetta

Preheat oven to 375 fegrees F. Wash and pat dry the Hens.
Salt and pepper each bird, add Herbes De Provence and Thyme. Add a little water to roasting pan to eliminate smoke from drippings as the Hens are cooked, Place birds on a rack over a roasting pan and bake for approximately 1 hour. Squeeze lemon juice over each hen as they cook. Place under the broiler for a few minutes to brown as desired. Remove from oven and let rest for 5 to 10 minutes while making the Bruschetta.

Using a food processor or blender, process the fresh basil leaves and garlic drizzling olive oil to make a pesto. Brush the bread slices with olive oil then grill them. Add the diced tomatoes and pesto mixture to each slice of bread. Drizzle additional olive oil, if desired.
